  2. Pat the beef dry with paper towels.

  4. Preheat your oven to 450°F (230°C).
  5. Roast the beef for 15 minutes at 450°F (230°C) for a golden-brown exterior.
  6. Reduce oven temperature to 325°F (160°C) and continue roasting until desired doneness (1 to 2 hours).
  7. Rest the beef covered loosely with foil for 20 minutes.
  8. Melt butter in a saucepan, add onion and garlic, sauté until softened.
  9. Sprinkle flour and stir to form a roux; then whisk in broth and wine.
  10. Add bay leaf and Worcestershire sauce; simmer until thickened (10–15 minutes).
  11. Slice the beef against the grain, drizzle with gravy, and garnish before serving.
