Method
- In a blender, combine the fresh pineapple chunks, coconut water, lime juice, mint leaves, and sugar. Blend until smooth.
- Strain the mixture through a fine mesh sieve into a pitcher to remove the pulp.
- Add the club soda to the pitcher and stir gently to combine.
- Fill glasses with ice cubes and pour the pineapple coconut mixture over the ice.
- Garnish each glass with a lime wedge and a sprig of mint. Serve immediately.
