- In a small saucepan, combine the dried cranberries and orange juice. Heat over medium heat, bringing the mixture to a gentle simmer. Simmer for about 5 minutes until cranberries soften.
- Remove the saucepan from the heat and let the mixture sit for about 30 minutes to enhance flavor.
- Place a fine sieve over a bowl and drain cranberries, pressing lightly to remove excess liquid. Finely chop the cranberries.
- In a mixing bowl, combine softened unsalted butter, confectioners’ sugar, and chopped cranberries. Blend until smooth.
- Transfer to ramekins or shape into a log using plastic wrap and chill in the refrigerator for at least 2 hours.
- Before serving, take the cranberry butter out of the fridge about 15 minutes in advance to soften.
