- Prepare a 9×13 inch pan and line it with aluminum foil or parchment paper, spraying it with nonstick cooking spray.
- Melt 4 tablespoons of unsalted butter in a large pot over medium-low heat, stirring until smooth.
- Add 6 cups of mini marshmallows to the melted butter, stirring continuously until the mixture is smooth and gooey.
- Remove from heat and stir in 1 package of instant pistachio pudding mix and 1 teaspoon of vanilla extract until fully incorporated.
- Fold in 6 cups of Rice Krispies cereal until each piece is well coated.
- Transfer the mixture to the prepared pan and press firmly into the corners using a spatula or your hands.
- Allow the treats to cool at room temperature for about 30 minutes before slicing into squares.
