Fruit
  • 1 cup fresh strawberries halve or slice before adding.
  • 1 cup pineapple chunks ensure canned is well-drained.
  • 1 medium kiwi peeled and sliced.
  • 1 cup raspberries fresh if possible.
  • to taste optional fruits (e.g., bananas, blueberries, mango) add bananas just before serving to prevent browning.
Topping
  • 1/2 cup toasted coconut flakes ensure they are toasted.

Method
 

Instructions
  1. In a large mixing bowl, beat the cream cheese until smooth and fluffy—about 2-3 minutes.
  2. Gradually mix in the powdered sugar and vanilla extract to the cream cheese until combined and smooth.
  3. Gently fold in the whipped topping using a silicone spatula.
  4. Prepare the fresh fruits: rinse, dry, slice strawberries and kiwi, and cut pineapple into bite-sized chunks.
  5. Add the prepared fruits into the cream cheese mixture and fold gently without mashing the berries.
  6. Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
  7. Before serving, sprinkle toasted coconut flakes on top for added texture.
