- In a large mixing bowl, beat the cream cheese until smooth and fluffy—about 2-3 minutes.
- Gradually mix in the powdered sugar and vanilla extract to the cream cheese until combined and smooth.
- Gently fold in the whipped topping using a silicone spatula.
- Prepare the fresh fruits: rinse, dry, slice strawberries and kiwi, and cut pineapple into bite-sized chunks.
- Add the prepared fruits into the cream cheese mixture and fold gently without mashing the berries.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
- Before serving, sprinkle toasted coconut flakes on top for added texture.
