Step-by-Step Instructions
  1. In a medium saucepan, combine 1 cup of filtered water with ½ cup of Raspberry Honey over medium heat, stirring until completely dissolved. Add lemon peel strips and a piece of fresh ginger, bringing to a gentle boil. Add 1 cup of sliced organic strawberries and simmer for 5 minutes.
  2. Remove from heat and let cool for about 15 minutes. Stir in ½ cup of fresh-squeezed lemon juice. Pour into a pitcher and refrigerate for 30 minutes.
  3. Using a fine mesh strainer, strain the mixture into a clean pitcher, pressing down to extract juice. Discard solids.
  4. Stir in 2 cups of cold club soda before serving, pouring over ice in tall glasses and garnishing with fresh strawberries and lemon slices.
