Ingredients
  

  • 4 bone-in skin-on chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons zaatar spice blend
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon zested and juiced
  • 1 cup cherry tomatoes halved
  • 1 red onion cut into wedges
  • Fresh parsley for garnish

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine olive oil, zaatar, garlic powder, salt, black pepper, lemon zest, and lemon juice. Mix well to create a marinade.
  3. Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  4. Place the marinated chicken thighs on a baking sheet lined with parchment paper. Arrange the cherry tomatoes and red onion around the chicken.
  5. Roast in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature should reach 165°F (75°C).
  6. Remove from the oven and let rest for 5 minutes. Garnish with fresh parsley before serving.
