  • 1/4 cup Fresh Parsley (chopped)
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 tablespoon Olive Oil for grilling
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt or coconut yogurt for dairy-free
  • 2 tablespoons Lemon Juice
  • 1 clove Additional Garlic (optional) for more flavor

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, onion, garlic, parsley, cumin, and coriander. Season with salt and black pepper. Mix thoroughly until integrated.
  2. Wet your hands and shape the mixture into 10-12 elongated oval patties, about 3 inches long.
  3. Preheat your grill or grill pan to medium-high heat, lightly oiling to prevent sticking.
  4. Grill patties for 5-7 minutes on each side until golden brown and firm. Check that internal temperature reaches 75°C (165°F).
  5. While cooking, prepare garlic yogurt sauce by combining yogurt, lemon juice, and a pinch of salt in a bowl. Optionally add minced garlic.
  6. Once cooked, remove kofta from the grill, let rest, and serve warm with yogurt sauce.
