For the Cabbage and Tofu
  • 1 head Cabbage Any variety as per preference
  • 14 oz Tofu Firm or extra-firm, crumbled
For the Sauce
  • 3 tbsp Sesame Paste Can substitute with peanut butter
  • 3 tbsp Tamari Gluten-free soy sauce
  • 1 tbsp Sambal Oelek Adjust for spice preference
  • 2 tbsp Mirin
  • 2 tbsp Hoisin Sauce Maple syrup or agave can be used
  • 1 cup Vegetable Broth Water can be a substitute
For the Garnish
  • 1/4 cup Peanuts Chopped; can substitute with almonds or sesame seeds
  • 2 stalks Scallions Sliced

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Crumble the tofu onto the baking sheet, mix spices and oil in a bowl, toss the tofu in it, then bake for 20 minutes.
  3. After 20 minutes, drizzle the tofu with mirin and hoisin, toss again, and bake for an additional 5 to 10 minutes.
  4. Cut the cabbage into wedges and season with spices on both sides.
  5. In a hot pan, add oil and sear the cabbage cut-side down for about 5 minutes.
  6. Nestle the cabbage in the pan, drizzle with vegetable broth, and bake for 20 to 25 minutes until tender.
  7. Whisk together sauce ingredients, thinned with vegetable broth to desired consistency.
  8. Serve the roasted cabbage topped with crispy tofu, sauce, peanuts, and scallions.
