- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Crumble the tofu onto the baking sheet, mix spices and oil in a bowl, toss the tofu in it, then bake for 20 minutes.
- After 20 minutes, drizzle the tofu with mirin and hoisin, toss again, and bake for an additional 5 to 10 minutes.
- Cut the cabbage into wedges and season with spices on both sides.
- In a hot pan, add oil and sear the cabbage cut-side down for about 5 minutes.
- Nestle the cabbage in the pan, drizzle with vegetable broth, and bake for 20 to 25 minutes until tender.
- Whisk together sauce ingredients, thinned with vegetable broth to desired consistency.
- Serve the roasted cabbage topped with crispy tofu, sauce, peanuts, and scallions.
