Ingredients
  

For the Meat Mixture

  • 14.75 oz Cream Style Corn Use additional canned corn for a chunkier texture.
  • 8.75 oz Canned Corn Frozen corn can be used for fresh flavor.
  • 1 oz Taco Seasoning Homemade versions can be made with chili powder, cumin, and paprika.
  • 1 tbsp Onion Powder Fresh, sautéed onions offer a more robust taste.
  • Salt & Pepper Adjust according to personal taste.
For the Cornbread Topping
  • 17 oz Jiffy Cornbread Mix Any cornbread mix works; jalapeños can be added for spice.
  • 3 cups Mexican Cheese Blend Cheddar can be used for a different flavor.
  • 2 large Eggs Flax eggs can be a vegan replacement.
  • 2/3 cup Milk Plant-based milk is a good alternative.

Method
 

Preparing the Casserole
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, add the lean ground beef and cook over medium-high heat for 5-7 minutes until browned.
  3. Lower the heat and stir in cream style corn, canned corn, and diced tomatoes, mixing for 2-3 minutes.
  4. Sprinkle in taco seasoning, onion powder, salt, and pepper. Stir and let simmer for 5 minutes.
  5. Remove from heat and stir in 2 cups of the cheese blend until melted and creamy.
  6. Pour the beef and cheese mixture into a greased baking dish and spread evenly.
  7. In a separate bowl, combine cornbread mix, milk, and eggs. Beat until smooth for about 1-2 minutes.
  8. Pour cornbread batter over the beef mixture and spread it evenly.
  9. Bake in the preheated oven for 17-20 minutes until golden brown.
  10. Sprinkle remaining cheese on top and return to oven for an additional 4-5 minutes until melted.
  11. Let cool for a few minutes, cut into squares, and serve.
