Preparing the Casserole
- Preheat your oven to 400°F (200°C).
- In a large skillet, add the lean ground beef and cook over medium-high heat for 5-7 minutes until browned.
- Lower the heat and stir in cream style corn, canned corn, and diced tomatoes, mixing for 2-3 minutes.
- Sprinkle in taco seasoning, onion powder, salt, and pepper. Stir and let simmer for 5 minutes.
- Remove from heat and stir in 2 cups of the cheese blend until melted and creamy.
- Pour the beef and cheese mixture into a greased baking dish and spread evenly.
- In a separate bowl, combine cornbread mix, milk, and eggs. Beat until smooth for about 1-2 minutes.
- Pour cornbread batter over the beef mixture and spread it evenly.
- Bake in the preheated oven for 17-20 minutes until golden brown.
- Sprinkle remaining cheese on top and return to oven for an additional 4-5 minutes until melted.
- Let cool for a few minutes, cut into squares, and serve.
