  • 2 tablespoons olive oil or any neutral oil
  • 1 medium onion diced
  • 3 cloves garlic chopped
  • 2 tablespoons tomato paste or pureed tomatoes
  • 1 teaspoon fresh oregano or dried at 1:3 ratio
  • 1 teaspoon fresh thyme or Italian seasoning
  • ½ cup sundried tomatoes or fresh tomatoes
  • 1 can chickpeas drained
  • ½ cup orzo or gluten-free pasta/quinoa
  • 4 cups vegetable stock or chicken stock
For the Flavor Finish
  • 1 cup green olives pitted, Castelvetrano or kalamata
  • ½ cup coconut cream or cashew cream
  • 2 cups baby spinach or kale/Swiss chard
  • Salt & black pepper to taste

Method
 

Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add 1 diced onion and sauté until softened and translucent, about 5 minutes.
  2. To the sautéed onion, add 3 cloves of chopped garlic and cook for 1 minute until fragrant. Stir in 2 tablespoons of tomato paste, 1 teaspoon of fresh oregano, and 1 teaspoon of fresh thyme, cooking for another 2 minutes.
  3. Add ½ cup of sundried tomatoes, 1 can of drained chickpeas, and ½ cup of orzo to the pot. Pour in 4 cups of vegetable stock, stirring well to combine.
  4. Once boiling, reduce the heat to low and let the soup simmer uncovered for about 10 minutes.
  5. After 10 minutes, stir in 1 cup of pitted green olives, ½ cup of coconut cream, and 2 cups of baby spinach. Cook until the spinach has wilted, about 2–3 minutes.
  6. Finally, taste your soup and season with salt and black pepper. Let it simmer for an additional minute before serving.
