- Preheat your griddle over medium-high heat. Add the ground beef to the hot surface, seasoning it with chipotle powder. Cook for 6–8 minutes, breaking apart until nicely browned and crispy.
- Sprinkle a layer of shredded pepper jack cheese over the hot beef. Cover and allow the cheese to melt for about 2–3 minutes.
- While the cheese melts, toast hoagie buns cut-side down on the griddle for 2–3 minutes until golden brown.
- Layer the cheesy ground beef into the toasted hoagie buns. Top with lettuce and pico de gallo.
