  • 1 package Mini Filo Shells or phyllo dough sheets
  • 2 tablespoons Extra Virgin Olive Oil or melted butter
  • 1 cup Green Onions/Shallots chopped
  • 2 cloves Garlic minced
  • to taste Sea Salt
  • to taste Freshly Ground Pepper
  • 2 tablespoons All-Purpose Flour or cornstarch for gluten-free
  • 1 cup Half and Half or Heavy Cream; substitute with milk
  • 1 cup Artichoke Hearts drained and chopped
  • cup Greek Graviera Cheese or Gruyère
  • 1 teaspoon Lemon Zest optional
  • to taste Fresh Basil or Chives optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and let the mini filo shells come to room temperature on a baking sheet lined with parchment paper.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat, then add 1 cup of chopped green onions and sauté for 2-3 minutes.
  3. Sprinkle in 2 tablespoons of flour, stirring constantly for about 2 minutes until golden.
  4. Slowly pour in 1 cup of cream, stirring until it thickens, then fold in 1 cup of artichoke hearts.
  5. Add ⅓ cup of grated Graviera cheese and stir until melted; fold in optional lemon zest and herbs.
  6. Spoon the filling into each mini filo shell, sprinkle with remaining cheese, and bake for 18-20 minutes.
  7. Let the puffs cool for about 5 minutes before serving.
