  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, and fresh parsley. Add ground cumin, coriander, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  2. Using your hands, gently knead the mixture just until everything is evenly distributed. Set the mixture aside for about 10 minutes to allow the flavors to meld together.
  3. Wet your hands to prevent sticking, then take a small amount of the chicken mixture and shape it into elongated ovals, typically about 3 inches long. Aim to create around 10-12 kofta.
  4. Preheat your grill to medium-high heat (around 400°F). Lightly brush the grill grates with olive oil. Place the shaped kofta on the grill and cook for 5-7 minutes on each side, or until they are golden brown.
