Step-by-Step Instructions
  1. In a mixing bowl, combine sliced chicken breast with egg white, cornstarch, salt, and pepper. Mix until evenly coated and let marinate for 10-15 minutes at room temperature.
  2. Heat sesame oil in a large skillet over medium-high heat until shimmering. Add marinated chicken in batches, frying each for 5-7 minutes until golden brown. Drain on paper towels.
  3. In the same skillet, reduce heat and add more sesame oil. Sauté minced garlic, ginger, and dried chilies for 1-2 minutes until fragrant.
  4. Add ketchup, soy sauce, chili garlic sauce, vinegar, and sugar to the skillet. Stir well and simmer for 2-3 minutes, adjusting thickness with water if needed.
  5. Add crispy fried chicken back into the skillet and toss in the sauce until thoroughly coated. Simmer for an additional minute.
  6. Transfer Dragon Chicken to a serving dish and garnish with sliced green onions and sesame seeds. Serve with rice, noodles, or lettuce.
