  • 1 cup diced bell pepper any color
  • 1 cup diced onion
  • 1 cup chicken broth
  • 1 cup frozen peas
  • Fresh parsley chopped (for garnish)

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for another 2 minutes until the spices are fragrant.
  3. Add the diced potatoes, bell pepper, and onion to the skillet. Stir to combine and cook for about 5 minutes, allowing the vegetables to soften slightly.
  4. Pour in the chicken broth, cover the skillet, and reduce the heat to low. Let it simmer for 15-20 minutes, or until the potatoes are tender, stirring occasionally.
  5. Stir in the frozen peas and cook for an additional 5 minutes until heated through.
  6. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
