- Heat oil or ghee in a large skillet over medium heat. Once shimmering, add onion and sauté for 5–7 minutes until golden brown.
- Add ground beef, breaking it apart with a spatula. Cook for 8–10 minutes, stirring frequently until browned evenly.
- Stir in diced tomatoes and cook for another 5 minutes until they soften and meld with the beef and onions.
- Sprinkle cumin, coriander, garam masala, turmeric, and chili powder into the mixture. Cook for 2–3 minutes until fragrant.
- Add diced potatoes and 1 cup of water. Cover and reduce heat to low, allowing to simmer for 15–20 minutes until potatoes are fork-tender.
- Adjust seasoning with salt and additional chili powder if desired. Let simmer for another 5 minutes to blend flavors.
- Serve warm alongside basmati rice or naan, garnished with fresh cilantro if desired.
