Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C).
  2. Generously season the beef chuck roast with kosher salt and let it sit for 10 minutes.
  3. In a large pot, heat the vegetable oil and sear the beef for 5-7 minutes on each side.
  4. Remove the beef and sauté onion, garlic, and ginger for 3-4 minutes until fragrant.
  5. Mix gochujang, brown sugar, soy sauce, and beef broth in a bowl, then pour over aromatics in the pot.
  6. Return the beef to the pot, cover, and bake for 3-4 hours until fork-tender.
  7. Let the roast rest for a few minutes before serving it over rice garnished with cilantro and kimchi.
