Ingredients
  

  • 2 to 3 pounds beef brisket
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 2 cups red wine such as Cabernet Sauvignon
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 300°F (150°C).
  2. Season the brisket generously with salt and pepper on both sides.
  3. In a large Dutch oven, heat the olive oil over medium-high heat. Add the brisket and sear for about 4-5 minutes on each side until browned. Remove the brisket and set aside.
  4. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
  5. Stir in the red wine, scraping the bottom of the pot to release any browned bits. Bring to a simmer and let it cook for about 5 minutes.
  6. Add the beef broth, tomato paste, thyme, and bay leaves. Stir well to combine.
  7. Return the brisket to the pot, ensuring it is submerged in the liquid. Cover the pot with a lid and transfer it to the preheated oven.
  8. Braise in the oven for 3 to 4 hours, or until the brisket is tender and easily shreds with a fork.
  9. Once done, remove the pot from the oven and let the brisket rest for about 15 minutes before slicing.
  10. Serve the sliced brisket with the braising liquid spooned over the top and garnish with fresh parsley.
