  • 2 pounds Beef Stew Meat or chuck roast
  • 1/4 cup Unsalted Butter or ghee for dairy-free
  • 4 cloves Garlic minced
  • 1 cup Beef Broth or vegetable broth for vegetarian option
  • 2 tablespoons Worcestershire Sauce or soy sauce for vegetarian option
For the Potatoes
  • 1 pound Baby Potatoes halved
For Seasoning
  • 1 teaspoon Dried Thyme or fresh thyme
  • 1 teaspoon Dried Rosemary optional

Method
 

Cooking Steps
  1. Sear the beef in a skillet with olive oil for 2-3 minutes until browned, then transfer to the slow cooker.
  2. In the same skillet, melt unsalted butter and sauté minced garlic for 1 minute. Add beef broth and Worcestershire sauce, scraping the skillet.
  3. Stir in dried thyme and dried rosemary, then pour over the beef in the slow cooker.
  4. Add halved baby potatoes to the slow cooker and dot with another tablespoon of butter.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours until the beef is tender.
  6. Taste and adjust seasoning, then garnish with parsley before serving.
