Cooking Steps
- Sear the beef in a skillet with olive oil for 2-3 minutes until browned, then transfer to the slow cooker.
- In the same skillet, melt unsalted butter and sauté minced garlic for 1 minute. Add beef broth and Worcestershire sauce, scraping the skillet.
- Stir in dried thyme and dried rosemary, then pour over the beef in the slow cooker.
- Add halved baby potatoes to the slow cooker and dot with another tablespoon of butter.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the beef is tender.
- Taste and adjust seasoning, then garnish with parsley before serving.
