Method
- Using a vegetable peeler, shave the asparagus into thin ribbons. If the asparagus is thick, you can also slice it very thinly. Place the shaved asparagus in a large bowl.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle the dressing over the shaved asparagus and toss gently to combine.
- On a serving platter, arrange the dressed asparagus. Tear the burrata into pieces and place it on top of the asparagus.
- Drape the prosciutto slices over the salad.
- Sprinkle the shaved Parmesan cheese and fresh basil leaves over the top. Serve immediately.
