Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1 pound baby potatoes halved
  • 1 pound fresh corn cut into 1-inch pieces (about 3 ears)
  • 8 ounces smoked sausage sliced
  • 4 tablespoons olive oil
  • 2 teaspoons Old Bay seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Lemon wedges for serving
  • Fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the halved baby potatoes, sliced smoked sausage, olive oil, Old Bay seasoning, garlic powder, paprika, salt, and pepper. Toss until everything is well coated.
  3. Spread the potato and sausage mixture evenly on a large sheet pan. Roast in the preheated oven for 20 minutes.
  4. After 20 minutes, remove the pan from the oven and add the corn pieces. Toss everything together and return to the oven for an additional 10 minutes.
  5. Finally, add the shrimp to the pan, tossing gently to combine. Roast for another 5-7 minutes, or until the shrimp are pink and cooked through.
  6. Remove from the oven and let cool for a couple of minutes. Serve with lemon wedges and garnish with chopped parsley.
