Ingredients
  

  • 1 pound ground beef or turkey
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced (any color)
  • 1 can 15 ounces diced tomatoes, undrained
  • 1 can 15 ounces tomato sauce
  • 2 cups beef or vegetable broth
  • 1 cup uncooked rice white or brown
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheese cheddar or mozzarella
  • Fresh parsley chopped (for garnish, optional)

Method
 

  1. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat and transfer the meat to the slow cooker.
  2. Add the diced onion, minced garlic, and diced bell pepper to the slow cooker.
  3. Pour in the diced tomatoes, tomato sauce, and broth. Stir to combine.
  4. Add the uncooked rice, oregano, basil, salt, and black pepper. Mix well.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the rice is tender.
  6. Once cooked, stir in the shredded cheese until melted.
  7. Serve hot, garnished with fresh parsley if desired.
