Method
 

Step-by-Step Instructions
  1. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 4-5 minutes on each side until golden brown.
  2. In a medium saucepan, bring chicken broth and a pinch of salt to a boil. Add rice, stir, cover, and simmer for 15-18 minutes until tender. Fluff rice with a fork.
  3. In the same skillet, reduce heat to medium and melt butter. Whisk in flour until golden, then gradually add milk and chicken broth, stirring until sauce thickens.
  4. Remove skillet from heat and stir in cheddar cheese and Parmesan cheese until melted. Adjust seasoning as needed.
  5. Return chicken to the skillet and spoon sauce over it. Cover and simmer on low for 10 minutes.
  6. To serve, place fluffy rice on plates, top with smothered chicken and sauce, and garnish with chopped parsley.
