Step-by-Step Instructions
  1. Begin by washing 2 cups of fresh cherries, then pit and halve them. Place the prepared cherries in a mixing bowl and set aside.
  2. In a medium saucepan, combine the halved cherries with 1 cup of sugar and ½ cup of apple cider vinegar. Allow this mixture to rest for about 10 minutes.
  3. Stir in 1 finely chopped red onion, 1 tablespoon of freshly grated ginger, 1 teaspoon of cumin, and 1 teaspoon of chili powder into the mixture.
  4. Place the saucepan over medium heat and cook the mixture, stirring occasionally until it starts to bubble. Let it simmer for about 20-30 minutes.
  5. Once thickened, remove it from heat, and let it cool for about 15 minutes before transferring to a clean, sterilized jar.
