  • 2 tablespoons soy sauce tamari can be used for gluten-free
  • Sriracha to taste adjust based on spice preference

  • 1 can coconut milk full-fat recommended

Method
 

Step-by-Step Instructions
  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 5–7 minutes until translucent.
  2. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Add the chopped carrots and sauté for another 5 minutes.
  4. Pour in the vegetable broth, bring to a simmer, and cover for 15–20 minutes until carrots are tender.
  5. Blend the soup with an immersion blender until smooth or desired consistency.
  6. Mix a ladle of the hot soup with the miso paste in a bowl until dissolved, then stir back into the pot.
  7. Stir in the coconut milk and soy sauce, heating gently without boiling.
  8. Season with salt and pepper, garnish with green onions and cilantro, and serve warm.
