Ingredients
  

  • 1 cup rolled oats
  • 2 cups milk dairy or non-dairy
  • 1 cup fresh strawberries hulled and sliced
  • 1/2 cup Greek yogurt plain or vanilla
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

  1. In a medium bowl, combine the rolled oats, milk, Greek yogurt, honey (or maple syrup), vanilla extract, and salt. Stir well until all ingredients are fully combined.
  2. Gently fold in the sliced strawberries, reserving a few for topping.
  3. Divide the mixture evenly into two jars or containers with lids.
  4. Seal the jars and refrigerate overnight (or at least 4 hours) to allow the oats to soak and soften.
  5. In the morning, give the oats a good stir and top with the reserved strawberries. Enjoy cold or warm them up in the microwave for about 30 seconds if desired.
