Ingredients
  

  • 1 can 15 ounces chickpeas, drained and rinsed
  • 1/2 cup sun-dried tomatoes packed in oil, drained
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Water as needed for consistency

Method
 

  1. In a food processor, combine the chickpeas, sun-dried tomatoes, tahini, olive oil, lemon juice, garlic, and ground cumin.
  2. Blend until smooth, scraping down the sides as needed.
  3. If the hummus is too thick, add water a tablespoon at a time until you reach your desired consistency.
  4. Season with salt and pepper to taste. Blend again to combine.
  5. Transfer the hummus to a serving bowl and drizzle with additional olive oil if desired.
  6. Serve with pita chips, fresh vegetables, or spread on sandwiches.
