  • 1 lb Ground Beef opt for lean beef
  • 2 tbsp Chili Powder can substitute with taco seasoning
  • 1 tsp Cumin coriander is a suitable alternative
  • 1 tsp Garlic Powder or use minced garlic
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper freshly cracked for more intensity
  • 1/4 tsp Cayenne optional for heat
For the Veggies and Base
  • 1 medium White Onion, diced yellow or red onion can be substitutes
  • 1 cup Green Peppers, diced any bell pepper variety works
  • 2 medium Russet Potatoes, diced sweet potatoes can be used instead
  • 1 cup Salsa ensure it’s no-sugar-added
  • 1 can Mild Green Chiles, drained jarred jalapeños can be added for spice
  • 1/2 cup Sliced Black Olives, drained optional
  • 1 can Diced Tomatoes, drained fresh tomatoes can be used
For Binding
  • 2 cloves Minced Garlic or replace with garlic powder
  • 2 large Beaten Eggs omit for a different consistency

Method
 

Step-by-Step Instructions for Taco Casserole
  1. Preheat your oven to 350°F (175°C) and gather your ingredients.
  2. In a large skillet, brown the ground beef for 5-7 minutes, then add minced garlic and diced onion, cooking for an additional 3-4 minutes.
  3. In a casserole dish, combine the diced green peppers, russet potatoes, salsa, mild green chiles, sliced black olives, and diced tomatoes.
  4. Drain excess grease from the beef, then stir in chili powder, cumin, garlic powder, salt, black pepper, and cayenne. Toast for 1-2 minutes.
  5. Transfer the beef mixture into the casserole dish with the veggies, add beaten eggs, and mix thoroughly.
  6. Cover the dish with aluminum foil and bake for 45 minutes to 1 hour until the potatoes are tender.
  7. Let it sit for a few minutes before serving over fresh greens or with toppings of choice.
