Ingredients
  

  • 1 pound ground beef or turkey
  • 1 medium onion diced
  • 1 bell pepper diced (any color)
  • 2 cloves garlic minced
  • 1 can 15 ounces black beans, rinsed and drained
  • 1 can 15 ounces kidney beans, rinsed and drained
  • 1 can 15 ounces corn, drained
  • 1 can 28 ounces diced tomatoes (with juices)
  • 1 packet taco seasoning about 1 ounce
  • 2 cups beef broth or vegetable broth
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese for topping
  • 1 cup sour cream for topping
  • Tortilla chips for serving

Method
 

  1. In a large pot or Dutch oven, brown the ground beef (or turkey) over medium heat until fully cooked. Drain excess fat if necessary.
  2. Add the diced onion, bell pepper, and minced garlic to the pot. Sauté for about 5 minutes, or until the vegetables are softened.
  3. Stir in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, and beef broth. Mix well to combine.
  4. Bring the mixture to a boil, then reduce the heat to low. Simmer uncovered for about 20-25 minutes, stirring occasionally.
  5. Taste and season with salt and pepper as needed.
  6. Serve hot, topped with shredded cheddar cheese, a dollop of sour cream, and tortilla chips on the side.
