Tart Preparation
- Preheat the oven to 375°F (190°C). Combine flour, butter, powdered sugar, and salt in a mixing bowl. Mix until resembling coarse crumbs. Gradually add ice water to form dough.
- Press the dough into a tart pan and chill for 15 minutes. Poke the bottom with a fork to prevent bubbling. Bake for 20-25 minutes until golden brown. Let cool completely.
- Heat the milk in a medium saucepan over medium heat until steaming. In a separate bowl, whisk sugar and egg yolks until creamy. Gradually whisk in cornstarch, ensuring no lumps.
- Pour hot milk into the egg mixture slowly while stirring. Return the mixture to the saucepan and stir continuously until thickened, about 5-7 minutes. Remove from heat and add vanilla bean seeds and butter.
- Pour the pastry cream into the cooled tart shell and chill in the refrigerator for at least 2 hours.
- Arrange fresh berries on top of the pastry cream. Garnish with mint leaves before serving.
- Slice the tart into wedges and enjoy!
