Method
 

Tart Preparation
  1. Preheat the oven to 375°F (190°C). Combine flour, butter, powdered sugar, and salt in a mixing bowl. Mix until resembling coarse crumbs. Gradually add ice water to form dough.
  2. Press the dough into a tart pan and chill for 15 minutes. Poke the bottom with a fork to prevent bubbling. Bake for 20-25 minutes until golden brown. Let cool completely.
  3. Heat the milk in a medium saucepan over medium heat until steaming. In a separate bowl, whisk sugar and egg yolks until creamy. Gradually whisk in cornstarch, ensuring no lumps.
  4. Pour hot milk into the egg mixture slowly while stirring. Return the mixture to the saucepan and stir continuously until thickened, about 5-7 minutes. Remove from heat and add vanilla bean seeds and butter.
  5. Pour the pastry cream into the cooled tart shell and chill in the refrigerator for at least 2 hours.
  6. Arrange fresh berries on top of the pastry cream. Garnish with mint leaves before serving.
  7. Slice the tart into wedges and enjoy!
