Step-by-Step Instructions for Braised Catalina Chicken
  1. Preheat your oven to 350°F (175°C).
  2. Pat the chicken thighs dry with paper towels and season generously with salt and pepper.
  3. In a Dutch oven, heat olive oil over medium heat and sear the chicken thighs skin-side down for 4-5 minutes until crispy and golden brown.
  4. Flip the chicken and cook for an additional 2 minutes, then remove and set aside.
  5. Whisk together all ingredients for the homemade Catalina sauce.
  6. Pour half of the Catalina sauce into the Dutch oven, add the seared chicken thighs skin-side up, and pour the remaining sauce over them.
  7. Cover the Dutch oven and bake for 45 minutes.
  8. Remove the cover and continue baking for an additional 20-25 minutes until sauce thickens and chicken is tender.
  9. Serve hot, spooning some sauce over the chicken and garnishing with fresh parsley if desired.
