  • 1/2 cup Chopped Peanuts Use sunflower seeds for a nut-free option.
  • 1/4 cup Fresh Cilantro Omit if not a fan.
  • 1/4 cup Fresh Basil Mint can be used for a different flavor.
  • to taste Salt & Pepper Essential for seasoning.
For the Peanut Dressing
  • 1/4 cup Creamy Peanut Butter Opt for natural for a healthier choice.
  • 2-3 tablespoons Water Add more for desired consistency.
  • 2 tablespoons Soy Sauce Use gluten-free soy sauce if needed.
  • 2 tablespoons Lime Juice Freshly squeezed is ideal.
  • 1 tablespoon Honey Maple syrup is a suitable vegan swap.
  • 1 teaspoon Toasted Sesame Oil Can leave out if unavailable.
  • 1 teaspoon Grated Fresh Ginger Use ground ginger sparingly if fresh is unavailable.
  • 1/2 teaspoon Garlic Powder Substitute with fresh minced garlic for bolder taste.

Method
 

Step 1: Prepare the Peanut Dressing
  1. In a medium bowl, whisk together the creamy peanut butter, 2-3 tablespoons of water, soy sauce, lime juice, honey, sesame oil, ginger, and garlic powder until smooth. Set aside.
Step 2: Combine the Salad Ingredients
  1. In a large mixing bowl, add the coleslaw mix, shredded chicken, scallions, red bell pepper, peanuts, cilantro, and basil. Toss gently.
Step 3: Dress the Salad
  1. Drizzle half of the peanut dressing over the salad and toss to coat. Add more dressing to taste.
Step 4: Season and Serve
  1. Season with salt and pepper, toss again, and serve immediately for the best crunch.
