  • 1 tablespoon Fresh Sage Can use dried sage at half the amount.
For the Topping
  • 1 cup Mozzarella Cheese Can substitute with cheddar or Monterey Jack.

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Spray a 9x13 inch baking dish with cooking spray.
  3. Pour 1 cup of turkey gravy into the bottom of the baking dish.
  4. Distribute cooked turkey, stuffing, and optional cranberry sauce evenly across each tortilla, sprinkling with fresh sage.
  5. Roll each tortilla tightly and place seam-side down in the baking dish.
  6. Pour remaining turkey gravy over the enchiladas and sprinkle with mozzarella cheese.
  7. Bake for 30 minutes; switch to broil for an additional 2-3 minutes to achieve a golden top.
  8. Let cool slightly, then serve warm with extra cranberry sauce.
