Method
 

Step-by-Step Instructions
  1. In a high-speed blender, combine the zest and juice of two large lemons, coconut milk, an optional splash of water, sweetener, a pinch of salt, and turmeric. Blend on high for about 30 seconds until silky smooth.
  2. Add chia seeds to the mixture. Pulse the blender once or twice to evenly distribute the seeds.
  3. Taste the mixture. Add more sweetener or lemon juice if needed, blending briefly again to combine.
  4. Pour the mixture into serving glasses or bowls, covering with plastic wrap. Chill in the refrigerator overnight.
  5. Serve with whipped coconut cream and a sprinkle of fresh lemon zest on top.
