- In a high-speed blender, combine the zest and juice of two large lemons, coconut milk, an optional splash of water, sweetener, a pinch of salt, and turmeric. Blend on high for about 30 seconds until silky smooth.
- Add chia seeds to the mixture. Pulse the blender once or twice to evenly distribute the seeds.
- Taste the mixture. Add more sweetener or lemon juice if needed, blending briefly again to combine.
- Pour the mixture into serving glasses or bowls, covering with plastic wrap. Chill in the refrigerator overnight.
- Serve with whipped coconut cream and a sprinkle of fresh lemon zest on top.
