- In a small mixing bowl, combine ranch dressing and taco seasoning until thoroughly blended. Set aside to allow flavors to meld.
- Bring a large pot of water to a rolling boil. Add the rotini pasta and cook according to package instructions, about 8-10 minutes, until al dente. Drain and rinse under cold water.
- Transfer cooled rotini into a large mixing bowl. Pour the ranch and taco dressing over the pasta and toss gently.
- Add chopped cherry tomatoes, green and red bell peppers, and red onion to the pasta. Include black beans and corn, and fold gently.
- Cover and refrigerate for at least 30 minutes to allow flavors to deepen.
- Before serving, optionally sprinkle with cilantro and tortilla strips or crushed Doritos, then toss lightly.
