- Preheat your oven to 375°F (190°C) and grease a 9x5 or 8x8 baking dish with cooking spray or olive oil.
- Using a mandolin or a sharp knife, slice the large zucchini lengthwise into ⅛-inch thick slices.
- Take a zucchini slice, layer with shredded chicken and Alfredo sauce, then roll tightly and place seam-side down in the baking dish.
- Pour remaining Alfredo sauce over the roll ups, sprinkle with mozzarella and Parmesan cheese.
