Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x5 or 8x8 baking dish with cooking spray or olive oil.
  2. Using a mandolin or a sharp knife, slice the large zucchini lengthwise into ⅛-inch thick slices.
  3. Take a zucchini slice, layer with shredded chicken and Alfredo sauce, then roll tightly and place seam-side down in the baking dish.
  4. Pour remaining Alfredo sauce over the roll ups, sprinkle with mozzarella and Parmesan cheese.
  5. Bake in the preheated oven for about 25 minutes until sauce is bubbling and cheese is melting.
  6. Let the roll ups rest for about 10 minutes before serving, garnished with fresh parsley.
