- 1 cup almond milk (or any milk of your choice)
- 1 medium ripe banana, mashed
- 3 tablespoons peanut butter
- 1/4 cup chia seeds
- 2 tablespoons maple syrup (or honey)
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium bowl, whisk together the almond milk, mashed banana, peanut butter, maple syrup, vanilla extract, and salt until well combined.
- Stir in the chia seeds until evenly distributed.
- Cover the bowl and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and thicken the pudding.
- Once set, give the pudding a good stir. If it’s too thick, you can add a little more milk to reach your desired consistency.
- Serve chilled, topped with sliced bananas, a drizzle of peanut butter, or your favorite toppings.
Notes
- For a chocolate twist, add 1 tablespoon of cocoa powder to the mixture before refrigerating.
- Substitute almond milk with coconut milk for a creamier texture and tropical flavor.
