Description

A creamy and delicious Banana Peanut Butter Chia Seed Pudding that is easy to make and perfect for a healthy dessert or snack.

Ingredients

Scale
  • 1 cup almond milk (or any milk of your choice)
  • 1 medium ripe banana, mashed
  • 3 tablespoons peanut butter
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup (or honey)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium bowl, whisk together the almond milk, mashed banana, peanut butter, maple syrup, vanilla extract, and salt until well combined.
  2. Stir in the chia seeds until evenly distributed.
  3. Cover the bowl and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and thicken the pudding.
  4. Once set, give the pudding a good stir. If it’s too thick, you can add a little more milk to reach your desired consistency.
  5. Serve chilled, topped with sliced bananas, a drizzle of peanut butter, or your favorite toppings.

Notes

  • For a chocolate twist, add 1 tablespoon of cocoa powder to the mixture before refrigerating.
  • Substitute almond milk with coconut milk for a creamier texture and tropical flavor.
