- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, combine the grated zucchini, flour, baking powder, baking soda, salt, and cinnamon. Mix well.
- In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chocolate chips.
- Lightly grease the waffle iron with cooking spray or a small amount of oil. Pour the recommended amount of batter onto the preheated waffle iron and cook until golden brown, usually about 4-5 minutes.
- Carefully remove the waffle and repeat with the remaining batter.
- Serve warm with your favorite toppings, such as maple syrup, whipped cream, or additional chocolate chips.
Notes
- For a healthier option, substitute half of the all-purpose flour with whole wheat flour or almond flour.
