- 1 can (15 ounces) pink salmon, drained and flaked
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper (any color)
- 1/4 cup mayonnaise
- 1 large egg
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (optional)
- 2 tablespoons olive oil (for frying)
Instructions
- In a large bowl, combine the flaked salmon, breadcrumbs, onion, bell pepper, mayonnaise, egg, Dijon mustard, garlic powder, salt, black pepper, and parsley (if using). Mix until well combined.
- Form the mixture into patties, about 2 to 3 inches in diameter. You should have about 8 patties.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the patties in batches, being careful not to overcrowd the pan.
- Cook for about 4-5 minutes on each side, or until golden brown and crispy.
- Remove the patties from the skillet and place them on a paper towel-lined plate to absorb excess oil.
- Serve warm with your favorite dipping sauce or on a bun as a sandwich.

- For added flavor, try mixing in some shredded cheese or spices like paprika or cayenne pepper.
