Description

Ingredients

  • 1 can (15 ounces) pink salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (any color)
  • 1/4 cup mayonnaise
  • 1 large egg
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large bowl, combine the flaked salmon, breadcrumbs, onion, bell pepper, mayonnaise, egg, Dijon mustard, garlic powder, salt, black pepper, and parsley (if using). Mix until well combined.
  2. Form the mixture into patties, about 2 to 3 inches in diameter. You should have about 8 patties.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, add the patties in batches, being careful not to overcrowd the pan.
  4. Cook for about 4-5 minutes on each side, or until golden brown and crispy.
  5. Remove the patties from the skillet and place them on a paper towel-lined plate to absorb excess oil.
  6. Serve warm with your favorite dipping sauce or on a bun as a sandwich.
