Description

A delicious and easy-to-make Grilled Chicken Sandwich featuring avocado and a spicy chipotle mayo.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 sandwich rolls (ciabatta or brioche)
  • 1 ripe avocado, sliced
  • 1 cup lettuce (romaine or spinach)
  • 1 medium tomato, sliced
  • ½ cup mayonnaise
  • 1 tablespoon chipotle sauce (or to taste)
  • 1 teaspoon lime juice

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a small bowl, mix together garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub the spice mixture evenly over both sides of the chicken breasts.
  3. Drizzle olive oil over the chicken breasts and place them on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes.
  4. While the chicken is resting, prepare the chipotle mayo by mixing mayonnaise, chipotle sauce, and lime juice in a small bowl. Adjust the chipotle sauce to your desired spice level.
  5. Slice the grilled chicken breasts into strips.
  6. Toast the sandwich rolls on the grill for about 1-2 minutes until golden brown.
  7. Assemble the sandwiches by spreading a generous amount of chipotle mayo on the bottom half of each roll. Layer with lettuce, sliced tomato, grilled chicken, and avocado. Top with the other half of the roll.
  8. Serve immediately and enjoy!
