- 2 large eggs
- 1/4 cup almond flour
- 1/4 cup erythritol (or your preferred sweetener)
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Cooking spray or oil for the waffle maker
Instructions
- Preheat your waffle maker according to the manufacturer’s instructions. Lightly grease it with cooking spray or oil.
- In a mixing bowl, combine the shredded mozzarella cheese and almond flour. Mix well.
- In a separate bowl, whisk together the eggs, erythritol, vanilla extract, ground cinnamon, and salt until smooth.
- Pour the egg mixture into the bowl with the cheese and almond flour. Stir until all ingredients are well combined.
- Pour half of the batter into the preheated waffle maker, close the lid, and cook for about 3-5 minutes or until golden brown and cooked through.
- Carefully remove the chaffle and repeat with the remaining batter.
- Allow the chaffles to cool slightly before serving. You can top them with sugar-free syrup, whipped cream, or your favorite keto-friendly toppings.
Notes
- For a chocolate version, add 2 tablespoons of unsweetened cocoa powder to the batter.
