  1. In a mixing bowl, whisk together the dry ingredients: all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. In another bowl, combine your wet ingredients, folding in the diced apples.
  3. Heat oil in a frying pan over medium-high heat. Drop spoonfuls of the batter into the hot oil and fry for 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
  4. Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the flour, baking powder, baking soda, granulated sugar, and salt.
  5. In a separate bowl, whisk together the eggs, buttermilk, unsweetened applesauce, and vanilla extract until fully blended.
  6. Gently mix the wet ingredients into the dry, folding in the remaining diced apples until just combined.
  7. Prepare a greased loaf pan by lightly coating it with butter or cooking spray. Pour half of the batter into the bottom of the pan.
  8. Layer the fried fritters over this batter, then spoon the remaining batter on top, smoothing it out.
  9. Mix brown sugar and ground cinnamon for the topping. Brush melted butter over the top of the batter in the loaf pan, then sprinkle the cinnamon sugar mixture.
  10. Bake for 50-60 minutes, looking for a golden brown color and a toothpick inserted in the center coming out clean.
