- In a mixing bowl, whisk together the dry ingredients: all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, combine your wet ingredients, folding in the diced apples.
- Heat oil in a frying pan over medium-high heat. Drop spoonfuls of the batter into the hot oil and fry for 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
- Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the flour, baking powder, baking soda, granulated sugar, and salt.
- In a separate bowl, whisk together the eggs, buttermilk, unsweetened applesauce, and vanilla extract until fully blended.
- Gently mix the wet ingredients into the dry, folding in the remaining diced apples until just combined.
- Prepare a greased loaf pan by lightly coating it with butter or cooking spray. Pour half of the batter into the bottom of the pan.
- Layer the fried fritters over this batter, then spoon the remaining batter on top, smoothing it out.
- Mix brown sugar and ground cinnamon for the topping. Brush melted butter over the top of the batter in the loaf pan, then sprinkle the cinnamon sugar mixture.
- Bake for 50-60 minutes, looking for a golden brown color and a toothpick inserted in the center coming out clean.
