Step-by-Step Instructions
  1. Preheat your oven to 200°C (392°F).
  2. Cut the pumpkin into cubes, drizzle with oil, and season with salt. Roast for about 25 minutes or until tender.
  3. Cook the chorizo in a medium skillet over medium heat for about 8–10 minutes until browned.
  4. In a mixing bowl, combine the roasted pumpkin, cooked chorizo, caramelised onions, and shredded sage. Fold together gently.
  5. Roll out the chilled pastry and cut out circles. Each should hold a generous spoonful of filling.
  6. Place filling on one half of each pastry circle, fold over, and seal edges tightly.
  7. Arrange on a baking tray, brush the tops with beaten egg, and bake for 20-25 minutes until golden brown.
