  • 1 medium Onion finely chopped; red onion preferred
  • 1 medium Carrot grated
  • 1 medium Zucchini diced; can substitute cucumber
  • 1 medium Red Bell Pepper chopped; can use yellow or orange
  • 2 cloves Garlic minced

For the Creaminess
  • 8 ounces Cream Cheese room temperature; use dairy-free for vegan option
  • 2 tablespoons Mayonnaise or Greek yogurt for a lighter option
  • 1 cup Shredded Mozzarella Cheese or cheddar/feta for stronger flavor
For Flavor Boosting
  • 1 teaspoon Dried Italian Seasoning or fresh herbs
  • 1 teaspoon Paprika or cumin for more flavor
  • ¼ cup Fresh Parsley chopped; basil or dill can be used
  • 1 tablespoon Lemon Juice or lime juice for a variation

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat. Add onion, carrot, zucchini, and red bell pepper. Cook for 6-8 minutes until softened.
  2. Add minced garlic, salt, black pepper, Italian seasoning, and paprika. Stir and cook for 1 minute.
  3. Remove from heat and let the mixture cool for 5-10 minutes.
  4. In a mixing bowl, combine the cooled vegetable mixture with cream cheese, mayonnaise, mozzarella, parsley, and lemon juice. Mix until smooth.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Before serving, stir and serve chilled with crackers or as a sandwich topping.
