Step-by-Step Instructions for Crispy & Juicy Arayes
- Prepare the meat mixture by processing chopped onion, garlic, parsley, and cilantro until finely minced. Combine with lamb, paprika, coriander, cumin, cayenne, salt, and pepper in a bowl, mix well, and refrigerate for at least 1 hour.
 - Preheat your oven to 400ºF (200ºC). Cut pitas in half to form pockets, stuff with meat mixture, seal edges, and cut each stuffed pita in half again.
 - Heat olive oil in a skillet over medium heat. Sear stuffed pitas, meat side down, for about 3 minutes until golden brown. Flip and sear the other side for another 3 minutes.
 - Transfer the skillet to the preheated oven and bake for approximately 8 minutes, or until lamb reaches 160ºF internally.
 - Remove from oven, cool slightly, and serve warm with tahini sauce and hot sauce.
