  • 4 Pitas Whole wheat or gluten-free alternatives can be used.

Method
 

Step-by-Step Instructions for Crispy & Juicy Arayes
  1. Prepare the meat mixture by processing chopped onion, garlic, parsley, and cilantro until finely minced. Combine with lamb, paprika, coriander, cumin, cayenne, salt, and pepper in a bowl, mix well, and refrigerate for at least 1 hour.
  2. Preheat your oven to 400ºF (200ºC). Cut pitas in half to form pockets, stuff with meat mixture, seal edges, and cut each stuffed pita in half again.
  3. Heat olive oil in a skillet over medium heat. Sear stuffed pitas, meat side down, for about 3 minutes until golden brown. Flip and sear the other side for another 3 minutes.
  4. Transfer the skillet to the preheated oven and bake for approximately 8 minutes, or until lamb reaches 160ºF internally.
  5. Remove from oven, cool slightly, and serve warm with tahini sauce and hot sauce.
