Marination and Wrapping
- In a mixing bowl, combine oyster sauce, soy sauce, sugar, ground white pepper, sesame oil, and minced garlic. Add the fresh large shrimp and mix well. Let marinate for 20 minutes.
- While the shrimp is marinating, cut spring roll wrappers into thirds and keep covered with a damp cloth.
- Take a strip of wrapper, place a marinated shrimp at one end, roll tightly, and seal with beaten egg. Repeat until all shrimp are wrapped.
Frying
- Heat oil in a deep frying pan to around 350°F (175°C).
- Carefully add wrapped shrimp to hot oil without crowding. Fry for 2-3 minutes each side until golden brown.
- Remove fried shrimp with a slotted spoon and drain on paper towels. Serve hot with sweet chili sauce.
