Ingredients
  

For the Shrimp
  • 1 pound Fresh large shrimp Tail-on preferred
  • 3 cloves Minced garlic Fresh is preferred
  • 2 tablespoons Oyster sauce Substitute with soy sauce for vegetarian
  • 2 tablespoons Soy sauce Low-sodium if preferred
  • 1 teaspoon Sugar Can reduce for less sweetness
  • 1 teaspoon Ground white pepper Substitute with black pepper if necessary
  • 1 tablespoon Sesame oil Use toasted sesame oil for stronger flavor
For the Wrappers
  • 10 sheets Spring roll wrappers Cut into thirds
  • 1 large Egg Beaten, can omit for vegan
For Frying
  • 2 cups Oil for frying High smoke point oil recommended
For Dipping
  • 1 cup Sweet chili sauce Traditional dipping sauce

Method
 

Marination and Wrapping
  1. In a mixing bowl, combine oyster sauce, soy sauce, sugar, ground white pepper, sesame oil, and minced garlic. Add the fresh large shrimp and mix well. Let marinate for 20 minutes.
  2. While the shrimp is marinating, cut spring roll wrappers into thirds and keep covered with a damp cloth.
  3. Take a strip of wrapper, place a marinated shrimp at one end, roll tightly, and seal with beaten egg. Repeat until all shrimp are wrapped.
Frying
  1. Heat oil in a deep frying pan to around 350°F (175°C).
  2. Carefully add wrapped shrimp to hot oil without crowding. Fry for 2-3 minutes each side until golden brown.
  3. Remove fried shrimp with a slotted spoon and drain on paper towels. Serve hot with sweet chili sauce.
